Meat inspection for trichinosis

Trichinosis is a parasitic disease caused by Trichinella spiralis. Trichinella larvae live encapsulated in muscles and adult parasites live in human intestines and intestines of various animals (most frequently being pigs, rats, dogs, foxes, badgers, bears and cats). Infected animal does not display symptoms of the disease, it is seemingly healthy and the changes cannot be seen with naked eye.

Animal health centre Mim Coop inspects meat for trichinosis and the inspection is exclusively conducted using the method of artificial digestion which is the only authorised method for this type of analysis. During the procedure, a digestion of the sample in the stomach is simulated and after the digestion ended the content is sedimented and the sediment is examined with a microscope.
